It’s a promise to Jacky S that I will make a cake and bring to Singapore. This one is adapted from the Cake Boss. I am not a fans of him. The program is ridiculous, to me. But when I searched for chocolate cheesecake recipe, a photo of his cake pleased me. Here is it! Mine used 85% dark chocolate, yielding seductive colour. Sweetness reduced significantly. Guilty feeling slashed 🙂
Why did I take the efforts? Because he is a very kind person. His door is always open to offer help. Indeed wish to thank for his kindness. Hope that I can put the cake in the refrigerator in the plane, to keep it in a good shape. Hope Jacky will like it. Ah, his birthday is 22nd Oct. Happy Birthday in advance!
90g crushed chocolate biscuit
40g butter, melted
350g cream cheese, softened
160g condensed milk
180g dark chocolate (85% cacao)
1 teaspoons vanilla
50g powdered sugar
100g dark chocolate
1 tablespoon orange juice
Preheat oven to 150°C.
Mix the ground biscuits and butter. Press onto bottom of a 16cm and 14cm cake pan.
Beat together cream cheese and milk until well blended.
Beat in eggs.
Blend in chocolate and vanilla.
Pour over crust.
Bake 40 minutes.
Beat together butter and powdered sugar until light and fluffy.
Add melted chocolate and orange juice. Mix until well blended.
Spread Topping over cheesecake; chill.
Let cheesecake stand at room temperature 30 minutes before serving. Garnish, if desired.
