It’s an intensive week.  Two days’ training, phone presentation, Andre Cohen & Fernando CiccarelliFernando’s farewell party and elderly home visit.  Fernando’s leaving added sadness.  But he was seen younger with the stress taken away.  Our CEO Andre will take a year’s leave to serve community work in Africa.  He is a great leader with dignified personality.  Admirable!

After the party I headed to friend’s home to continue the production of balloon flowers for the visit of elderly home.  It went on till 11pm.  Our leader stayed awake to complete all and fine tuning till 6am.  It was a fun day.  All elderly people gave full attention to games, performance and testimonies.  The time and hard work is worthy!

All right, back to the nice attempt, cherry chocolate mousse cake.  The idea is from Hayashi Syuhei.   But I just took the parts of different chocolate mousse plus extra gelatin which was absent from his recipe. It worked out well.  The upper part was a mix with milk chocolate of 58% cacao and white chocolate, 32% cacao.  No sugar added to the mousse.  The sweetness came out fine.  Moussy texture plus bites of fresh cherry, yum!  To be still nicer, I will increase the portion of chocolate mousse.

Sponge Cake
20cm square cake pan
4 eggs (medium size)
75g sugar
47-50g cake flour
12g corn starch
20g cocoa powder
40g butter

Preheat oven to 180C

Whisk the eggs and sugar over warm water until the egg mixture reaches 40C

Whip it at high speed until pale and thick.  Then continue with low speed for 1 minute

Fold the sifted flour mixture gently into the egg mixture in 3 batches.  Do not over mix

Mix the melted butter with equal amount of egg mixture till incorporated.  Pour the butter mixture into the egg mixture.  Fold gently until mixed and the surface becomes shiny.

Bake for 15 minutes (or less until cake tester comes out clean).  Let’s cool. Cut into half horizontally.

Dark Chocolate mousse
150g cream
85g dark chocolate, 75% cacao
25 pitted cherry, cut into half
0.5 sheet gelatin

Bloom the gelatin in cold water

Melt chocolate over warm water bath

Add bloomed gelatin

Whip the cream until soft peaks form.

Mix the whipped cream and melted chocolate

Add the cherry and mix well

Milk Chocolate Mousse
200g cream
150g milk (56% cacao)and white chocolate (33% cacao)  (or milk chocolate only)
0.75 sheet gelatin
Bloom the gelatin in cold water

Melt the two chocolates over warm water bath

Add bloomed gelatin

Whip the cream until soft peaks form.

Mix the whipped cream and melted chocolate

Cherry Sauce
Juice of cherry
Kirsch

Assembly

Lay 1 piece of the chocolate sponge cake at the bottom of a 20cm square pan.  Brush it with cherry sauce

Pour in the dark chocolate mousse with cherries

Lay the other piece of the sponge cake on top and brush it with cherry sauce

Pour in the milk chocolate mousse

Put in the refrigerator to set overnight

Shared joy is doubled joy.  I shared the cake with 8 colleagues and still a few others.  Multiplied joy!  Hooray!
