Homemade Pesto Sauce

Pork and pesto spaghetti

My basil plants grew like crazy while another new one started to bloom.  It’s time to use the old plants for homemade pesto sauce.   It’s easy.  Just need: basil, pine nuts, garlic, parmesan cheese, olive oil and a blender / food processor.

Here is the recipe:

40g pine nutshomemade pesto - basil

100g basil leaves

2 cloves of crushed garlic

30g finely grated parmesan cheese

125ml extra virgin olive oil

Pan fry the pine nuts over low heat for a couple of minutes.  Let cool.

Put the basil, crushed garlic, toasted pine nuts and parmesan cheese into a food processor.  Process until finely chopped.

With the motor running, add 125ml extra virgin olive oil in a slow stream.  Process until all the oil has been added and the mixture is a thick and slightly runny paste.

You can serve with pasta right away or put it in a jar to sit in the fridge.  I served sauté diced pork and hake fish.  Sprinkle some pine nuts.  Both were delicious.
