Cranberry Pistachio Bread

I love European bread.  Crispy crust, wheaty flavour = superb!  This time I tried to bake with no yeast but around 30% levain.  The growth of the dough was extremely slow.  With cranberry and pistachio merged in the dough, the end product mixed with sweet and sour, nutty and crispy.  Divine!

To make this bread, I adopted a recipe of Polenta Bread from the Fresh Loaf but without the polenta.   The bread was baked with high temperature 250C with steam for the initial few minutes.

Cranberry is also nice with walnuts.
