Black Sesame Sweet Soup / 芝麻糊

I like black sesame for its unique taste and health benefits.  For quite a long while, I take pure black sesame paste from a local health shop, Healthy Station (健康站).  Black sesame from Thailand is put into a cold pressed machine on spot. Customers have sesame paste the freshest way.  The black colour may seem strange, but it is tasty and full of benefits:

Below are the ingredients and steps (bilingual):

125g pure black sesame paste
25g rice
600g water
52g rock sugar

Soak the rice for at least an hour.

Blend the sesame paste, rice and water in a blender.

Cook the mixture in a saucepan with medium high heat. Keep on stirring. At the beginning, the mixture is very runny.  As it approaches to the boiling point, it starts to thicken.  Turn to medium heat.

Add the rock sugar and stir to dissolve while cooking the sesame soup. Off the heat after the rock sugar has dissolved totally. Enjoy!

125g 純黑芝麻醬
25g 米
600g 水
52g 冰糖

將米浸泡至少一小時。

將芝麻醬,米和水在攪拌機中攪拌。

用中高火將芝麻糊於煲中烹調並一邊攪拌。起初,芝麻糊很稀。當煮致接近沸點時,它開始變稠,調低至中火。

加入冰糖,一邊煮一邊攪拌溶解冰糖,在冰糖完全溶解後熄火。
