Recently I have had a trip to Vietnam. I tried iced coconut Vietnamese coffee in Danang (43 Factory) and Hanoi (Xofa Cafe). Both are very refreshing. The coconut cream and coffee were served separately at 43 Factory. One has to pour the coffee over the cream. At Xofa Cafe, the coconut cream with fine ice was scooped onto the coffee. Coconut stripes were put on top. Coconut and coffee complement each other very well. In my opinion, it is much better than coffee with milk. Plus it is very refreshing. So, I tried my own version at home. Love it!
1 cup crushed ice
2 tablespoons condensed milk
3 tablespoons coconut milk, (I used 65ml of individual pack coconut milk)
Combine all ingredients in a blender.
Blend until incorporated and ice is very fine.
Pour the coconut mixture into a cup. I put part into 2 heart shape containers.
Put the containers of the coconut mixture into the freezer for about an hour.
Black coffee 50ml. Chill in fridge.
Place in the refrigerator 5 minutes before serving.
Pour your chilled coffee into a glass, and remove frozen coconut from refrigerator. Mash up frozen coconut with fork to make it “scoopable,” then scoop it into the coffee. Do not mix. Put the heart shape coconut ice on top. Serve at once.
